Our way of doing it!!!
The harvest is done manually, put into small boxes to avoid crushing the grapes. Once the grapes arrive in the winery, they pass through the selection table, where our women, must be very careful to removeall the little stems.
But nothing goes unnoticed at the eyes of our owner, who notes that women are attentive to the stalks, but as well to the new guy !!!!.
The grapes from the selection table go to the tanks, where they remain for twenty days. Fermentation begins, and we work pumping, shedding and punching down the grapes.
The wine starts to be alive!! And to the delight of our workers .... we start to work day and night in the wine cellar ...
How was the season? The grapes have arrived healthy into the cellar, the production was less this year because of the intense heat of August. The quality is great, but we will speak about this in the next number.
We do not make grappa with the dregs of pressed grapes. We produce a natural compost to feed the soil of the vineyard.
